This pizza made with buffalo chicken and a cauliflower crust won’t wreck your diet. And it’s delish.



Love a good pizza, but hate all those carbs?


This recipe for buffalo chicken cauliflower crust pizza will set your tastebuds into overdrive without wrecking your diet.

THE CRUST


Five cups cauliflower rice


three large eggs

3/4 teaspoon salt

BUFFALO CHICKEN


¾-pound rotisserie shredded chicken breast (no skin)


2 tbsp hot sauce like Franks


4 scallions or green onions, finely chopped


3 tbsp reduced fat blue cheese crumbles


1 tsp garlic powder


1 cup shredded reduced fat mozzarella cheese

HOW TO MAKE IT


Spread cauliflower on baking sheet lined with parchment paper or silicone mat and bake at 425 degrees for 30 minutes or until golden brown.


In a kitchen towel, squeeze out the cauliflower and remove excess moisture.

Mix cauliflower, egg and salt, then spread mixture onto the parchment lined sheet pan or use a silicon pad.

Press into a 12-inch circle, bake at 400° for eight minutes.


While the crust bakes, prepare the toppings by tossing all ingredients except the mozzarella together in a bowl.


Remove the pan from oven and evenly spread topping and mozzarella cheese.

Bake pizza at 400 degrees until golden brown, approximately 10 to 12 minutes.

Cut into eight pieces.
