This easy blackberry cobbler is a holiday favorite.

Cool nights mean it’s time to put something delicious in the oven; something that will make your home smell heavenly.


This easy and delicious dessert is just what you need for the holidays.

WHAT’S IN IT


1 stick of butter, softened


1 cup sugar


3/4 cup flour


1 egg


1/2 tsp. vanilla


1/2 tsp. baking powder


1 1/2 cups fresh blackberries


2 tablespoons sugar


1 tablespoon lemon juice


WHAT’S IN IT


In a medium bowl, whip butter and sugar until fluffy, then add egg and vanilla and beat until combined.


Add flour, baking powder and mix well. Set aside.


In separate bowl, toss blackberries with additional sugar and lemon juice.

Place blackberries in the bottom of six mini ramekins. Top with two spoons of dough and lightly spread and pat down.


Put a teaspoon of melted butter on top of dough and sprinkle sugar on top.


Bake at 350 degrees for 35-40 minutes.


If desired, top with ice cream.
