This recipe is one of my favorites.


These cheesy fried fritters made with bacon and grits are full of flavor and the lucky ones you make them for will thank you!


WHAT’S IN IT


1 cup uncooked quick-cooking grits


4 cups milk


1 tsp. salt


1 1/2 cups shredded extra sharp cheddar cheese


8 slices of cooked and finely crumbled bacon


2 green onions, minced


1/2 tsp black pepper


2 large eggs


3 cups Japanese bread crumbs (I use Panko)


vegetable oil


HOW TO MAKE IT


Prepare grits according to package directions, using 4 cups milk and 1/2 tsp. salt.


Remove from heat and let stand for 5 minutes.


Stir in cheese and next three ingredients, stirring until cheese is melted.


Spoon mixture into a lightly greased 8-inch square baking dish and chill 4-6 hours.


Roll grits into 1 ½-inch balls.


Whisk together eggs and 1/4 cup water. Dip into egg wash and roll in breadcrumbs.


Fry fritters in hot vegetable oil until golden brown. Drain on paper towel.


Keep warm on a wire rack in oven on 225 degrees for up to 30 minutes.
