Love pizza, but hate the carbs?


This recipe for tangy buffalo chicken pizza made with a cauliflower crust will satisfy those cravings without wrecking your diet.


HERE’S WHAT YOU NEED FOR THE CRUST


5 cups rice cauliflower


three large eggs


3/4 teaspoon salt

TOPPING


3/4 lb. skinless rotisserie chicken breast, shredded


2 tablespoons hot sauce like Franks


4 scallions or green onions finely chopped


3 tablespoons reduced fat blue cheese crumbles


1 teaspoon garlic powder


1 cup shredded reduced fat mozzarella cheese

HOW TO MAKE IT


Spread cauliflower on baking sheet lined with parchment paper or silicone mat; bake at 425 degrees for 30 minutes or until golden brown.


Using a kitchen towel, squeeze cauliflower to remove excess moisture. Mix cauliflower, egg and salt.


Spread mixture onto parchment lined sheet and press into 12-inch circle; bake at 400 degrees for eight minutes.

While crust is baking, prepare the toppings by tossing all ingredients except for mozzarella together in a bowl.


Remove crust from oven and evenly spread topping then sprinkle with mozzarella cheese.


Bake pizza at 400 degrees until golden brown, approximately 10 to 12 minutes.


Cut the pizza into eight equal sized pieces two slices per serving.
