WHAT’S IN IT
2 sticks butter, softened
1/2 cup shortening
3 cups sugar
3 cups flour
1/2 tsp. baking powder
1 cup milk
1 tsp. vanilla
1 tsp. lime zest
4 Tbsp. fresh key lime juice
HOW TO MAKE IT
Pre-heat oven to 325 degrees.
Beat butter and shortening together until creamy. Gradually add sugar, beating at medium speed until light and fluffy.
Add eggs one at a time, beating until just blended after each addition.
Stir together flour and baking powder.
Add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition.
Stir in vanilla, lime zest and lime juice.
Pour batter into greased and floured 10-inch Bundt pan.
Bake for 1 hour and 15 minutes or until done. Use toothpick to check. Remove from pan to wire rack.
Pour glaze immediately and brush over sides of cake.
Key lime glaze
1 cup powdered sugar
2 Tbsp. fresh key lime juice
1/2 tsp. vanilla
Whisk all ingredients together until smooth.
