Quick and easy: Healthy chicken parmesan meatballs make the perfect weeknight dinner.



This healthy recipe for chicken parmesan meatballs can be whipped up in just minutes.


It makes a great weeknight dinner and wonderful leftovers.


WHAT YOU NEED


1 lb. lean ground chicken


1/4 cup grated Parmesan cheese


1/4 tsp pepper


1/2 tsp garlic salt


1/2 tsp Italian seasoning

1/4 tsp onion powder


1 1/2 cups no sugar added marinara


2 small to medium zucchini, chopped


2 small yellow squash, chopped


Parsley


Additional Parmesan for serving

HOW TO MAKE IT


Preheat oven to 350 degrees.


Combine ground chicken, Parmesan cheese and spices and form into meatballs. (Since this recipe makes three servings, I made 21 meatballs.)

Bake for 25 minutes; while meatballs are baking sauté zucchini and squash in skillet until seared and slightly tender.


Add meatballs to skillet and top with marinara; stirring gently until warm.


Serve over a bed of fresh spinach and top with additional parmesan and parsley.
