There’s just something about buffalo, especially when you’re talking about food.


And if you like your meals a little spicy, these recipes for buffalo chicken dip and buffalo chicken jalapeno popper casserole will send your tastebuds soaring.

INGREDIENTS FOR BUFFALO CHICKEN DIP


14 oz. chicken breast


1/2 cup grated reduced fat cheese


¼ cup Franks Hot Wing Sauce

¼ cup Light Hidden Valley Ranch


2 tbsp reduced fat cream cheese


1 ½ cups celery sticks


1 ½ cups sliced bell peppers

HOW TO MAKE IT


Preheat oven to 350 degrees.


Bake chicken breasts for 30-35 minutes or until cooked; remove from pan and chop into small pieces or shred.

Mix Franks Hot Wing Sauce, Ranch dressing and cream cheese; heat over medium-high heat, stirring until cream cheese is completely melted.


Pour the sauce mixture over chicken and sprinkle with cheddar cheese.


Bake for an additional 10 minutes or until the cheese is melted.


Serve with celery sticks, bell peppers or your favorite veggies!

INGREDIENTS FOR BUFFALO CHICKEN JALAPENO POPPER CASSEROLE


2 ½ pounds chicken breasts


1/4 cup jalapenos


10 oz. low fat cream cheese


1 tbsp olive oil


4 oz. reduced fat shredded cheddar

2 oz. part skim shredded mozzarella cheese


1/4 cup Frank's Red Hot Sauce


¼ tsp salt


½ tsp pepper

HOW TO MAKE IT


Preheat oven to 400 degrees.


Season chicken breasts with salt and pepper, then lay on a cooling rack over a cookie sheet wrapped in foil; bake 40 minutes.


Once your timer hits 20 minutes, start on the filling. Add olive oil into a pan over medium heat. Once oil is heated, add jalapenos into the pan.

Once jalapenos are soft and cooked, add cream cheese and Frank's Red Hot Sauce; mix until creamy.


Remove chicken from the oven and let cool slightly. Lay chicken into a casserole dish, then spread cream cheese mixture over it, then top with cheddar and mozzarella cheese.


Bake for 10-15 minutes longer.


Optional: Top with extra jalapenos before cooking.


Makes 6 servings.
