The Seeker is welcoming cooler weather with a fall/winter menu developed by Executive Chef Rob Cook, who opened the restaurant with the team in January 2025.

Launched in October and available through March 2027, the menu brings new reasons for neighbors to gather for a celebration or a great meal out.

The best-selling prime tenderloin filet ($58) pairs a coffee-ancho rub and marsala demi-glace with Manchego grits, roasted broccolini and red pepper shallot butter.

The sauce balances rich, nutty sweetness from coffee and Marsala wine with a touch of ancho chile heat.

Other favorites include crab and shrimp linguini carbonara ($38) with romano, guanciale and black pepper and duck confit gumbo ($40) with smoked tomato risotto, matchstick potatoes and pickled okra.

New veal meatballs and mushrooms ($17) are baked until bubbling in spicy tomato arrabbiata with garlic, pepperoncino, parsley and extra virgin olive oil, then finished with fresh basil and Pecorino Romano and served with toasted local sourdough.

For dessert, pumpkin banana bread pudding ($12) features candied walnuts, brown sugar banana and Texas whisky sauce.

Local suppliers include Veldhuizen Cheese and 1836 Premium Angus Beef.

“We wanted to create a place where people in Stephenville can come to celebrate life's big moments or simply enjoy a great meal out,” said Lisa Lennox, visionary behind The Seeker.

“This menu reflects that spirit: familiar flavors, a little discovery and a warm welcome every time you walk through the door.”

Named for the traveler in search of something more, The Seeker is a 2,500-square-foot restaurant showcasing Modern Texas Cuisine.

Its 88-seat interior features terrazzo floors, white oak screens and a copper-and-walnut island bar with a tree-lined patio seating 40.

Evening dining is complemented by events in The Cork Room, a 2,400-square-foot space accommodating 80 seated guests.

The Seeker is now booking holiday parties in its private event space, with seating for 20 to 80 guests.
