Start your day with healthy and delicious Super Hero Muffins.

It’s fall and you should start your day with something made with cinnamon and nutmeg, and this recipe I borrowed from Shalane Flanagan, author of Run Fast. Eat Slow., is perfect.


These Super Hero Muffins are healthy and delicious and your family will love them.


WHAT’S IN IT


2 cups almond meal (or almond flour)


1 cup old fashioned rolled oats


2 tsp ground cinnamon


½ tsp ground nutmeg


1 tsp baking soda


½ tsp fine sea salt

½ cup chopped walnuts


½ cup raisins, chopped dates or chocolate chips


3 eggs, beaten


1 cup grated zucchini


1 cup grated carrots


6 tbsp unsalted butter, melted


½ cup dark maple syrup


1 tsp vanilla extract

HOW TO MAKE IT


Preheat oven to 350 degrees; line 12-cup standard muffin tin with paper liners.


In large bowl, combine the almond meal, oats, cinnamon, nutmeg, baking soda, salt, walnuts, raisins, dates or chocolate chips.

In separate bowl, mix together the eggs, zucchini, carrots, butter, maple syrup and vanilla. Add to dry ingredients, mixing until just combined. The batter will be thick.


Spoon batter into muffin cups, filling each to the brim.


Bake until the muffins are nicely browned on top and a toothpick comes out clean, approximately 25-35 minutes.
