Newton’s Saddlerack prepares for New Year’s Eve celebration with 5-course dinner and wine pairing.



Ring in the new year with a delicious five-course dinner and wine pairing at Newton’s Saddlerack in downtown Stephenville.


The New Year’s Eve dinner celebration will begin at 6:30 p.m. with exclusive courses from Cowboy Chef Newton, French Chef Anthony Bar, Chef Whitley Bettis and Chef Shayne the Train from MasterChef and MasterChef Jr.

(Yeah, they will all be there!)


The menu begins with charcuterie for two featuring Veldhuizen cheese and Newton’s choice of cured meats with persimmon chutney, paired with Gewürztraminer white wine. Course two includes clear lobster consommé and vegetable brunoise, paired with Belle Glos Pinot Noir Blanc Rose Oeil de Perdrix.

The salad features kale and mixed greens with roasted butternut squash, chef’s bourbon chipotle candied pecans and maple vinaigrette, paired with Far Niente Chardonnay. The entree features buffalo filet with foie gras sauce, pommes duchesse, bacon-wrapped asparagus and roasted baby heirloom carrots, paired with Caymus Cabernet Sauvignon.


The final course includes a French trio of dark chocolate, milk and white chocolate mousse biscuit with cacao glaze, paired with a Late Harvest Riesling.

“We will finish the evening with a champagne toast and have everyone home in time to ring in the New Year or stay and welcome it in the Saddlerack bar,” Chef Newton told Beneath the Surface News.
