Crockpot season is upon us and this recipe for chicken burritos is an absolute favorite!
It’s a variation on a recipe I have made for years, but better and creamier.
The Husband enjoyed his in a low carb tortilla, but I made a bowl with lettuce and refried beans.
I cooked it on low in the crockpot for 6 hours and when I returned home that evening, my home smelled delish!
WHAT YOU NEED
4 boneless chicken breasts
Can of Rotel
Can of corn, drained
Can of black beans, drained
Taco seasoning
8-oz cream cheese
Red onion, thinly sliced
Brown rice, 1 ½ cups
1 cup chicken broth
Avocado (for garnish)
Other seasonings: Salt, pepper, garlic powder, onion powder and chili powder.
HOW TO MAKE IT
Put chicken breasts in crockpot, season with spices.
Add all other ingredients to chicken and cook on high for 3-4 hours or low for 5-6.
Shred chicken and serve in a tortilla or on top of lettuce in a bowl!
