The Mediterranean diet is one of the most popular trends in the U.S.
And this recipe for chicken patties is absolutely delicious. Top with your favorite tzatziki sauce and serve with chickpea salad (keep scrolling) and you will have a truly amazing dinner.

WHAT YOU NEED
3 tbsp olive oil
One medium onion, diced
1 tbsp minced garlic
One cup chopped baby spinach
1 pound ground chicken
½ cup Panko breadcrumbs
¼ cup Greek yogurt
2 tbsp fresh dill
1 tbsp fresh lemon
1 tsp dried oregano
½ tsp paprika
½ tsp cumin
HOW TO MAKE IT
In large skillet, heat 2 tablespoons olive oil over medium-high heat for approximately two minutes.
Sauté onions and garlic until tender; add spinach and cook for one minute until soft.
Set aside to cool for about five minutes.
In a large mixing bowl, combine chicken, sautéed onion/spinach mixture, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt and pepper to taste.
Shape into patties or meatballs. Cook in a large skillet over medium-high heat until thoroughly cooked, about three to five minutes on both sides.
CHICKPEA SALAD
1 ½ cups chickpeas, drained and dried
1 cup cubed cherry tomatoes
½ large red onion, chopped
1 cup cubed English cucumber
¼ cup feta cheese
½ cup chopped parsley, stems removed
BALSAMIC VINAIGRETTE
¼ cup extra virgin olive oil
1 tbsp balsamic vinegar
2 tsp lemon or lime juice
1 teaspoon Dijon mustard
½ tsp sea salt
¼ tsp black pepper
HOW TO MAKE IT
In large mixing bowl, add chickpeas, tomatoes, red onion, cucumber, feta and parsley.
Pour the vinaigrette over the salad and toss to combine.
