How to make the perfect dinner: Cauliflower pizza, kale salad and ricotta chocolate mousse.

Healthy pizza, a delicious kale salad and rich, creamy dessert is just what you need in your life.
Here’s how to make all three!
CAULIFLOWER PIZZA WITH CHICKEN AND TZATZIKI SAUCE
5 ½ cups riced cauliflower
2 eggs
1 tbsp low-fat parmesan cheese
¼ tsp salt divided
1 lb. boneless skinless chicken breast, cut into strips
10 kalamata olives
½ tsp Italian seasoning
¼ tsp black pepper
1 cup reduced fat shredded mozzarella
½ cup grated cucumber
½ cup plain Greek yogurt
½ tsp crushed garlic
HOW TO MAKE IT
Spread the cauliflower rice on a baking sheet lined with parchment or a silicone mat. Bake at 425 degrees for 30 minutes until golden brown.
Remove from oven and allow to cool (keep oven on). Remove excess moisture from cauliflower.
In large bowl, combine cauliflower with the eggs, parmesan cheese and quarter teaspoon of salt stir.
Place cauliflower mixture onto the baking sheet and press into a 12-inch circle or desired shape.
In medium bowl, add chicken strips, olives, Italian seasoning and pepper toss to combine. Arrange chicken strips and olives on top of crust and then sprinkle with mozzarella cheese.
Bake at 425 degrees for 20 minutes until golden brown.
While pizza bakes, make Tzatziki sauce, combine grated cucumbers (squeeze out moisture) yogurt garlic and ¼ tsp salt.
Cut pizza into wedge and top each wedge with tzatziki sauce. Enjoy! (Makes 4 servings.)
KALE SALAD
Rainbow Kale (ribs removed, finely chopped)
Juice of one lemon
1 tsp. Dijon mustard
Two cloves of garlic
2 tbsp olive oil
Yellow bell pepper
Shaved parmesan (optional)
HOW TO MAKE IT
Saute chopped garlic in oil set aside. Squeeze lemon on chopped kale, massage through with hands. Whisk oil garlic mixture, Dijon, an extra drizzle of oil. Add dressing to Kale and serve with optional shaved parmesan.
RICOTTA CHOCOLATE MOUSSE
Combine ingredients and enjoy!
½ cup part-skim ricotta cheese
1 tsp unsweetened cocoa powder
¼ tsp pure vanilla extract
½ pack Stevia
⅓ ounce slivered almonds
