I don’t know what it is about Courtney Cook, but I’m obsessed.

The TikTok sensation has gained a cult following with her quirky recipes and I have now made her cheese-stuffed sweet potato three times.

(Not counting the one I am eating for dinner tonight.)

I was never a big fan of sweet potatoes despite their serious health benefits.
Â
These nutrient-dense potatoes offer high amounts of beta-carotene, fiber, potassium, vitamin C and are good for vision, immunity and gut health.

In other words, they are super good for you, so when I saw Courtney’s viral recipe I had to try it.
Â
The original recipe calls for Butterkäse ("butter cheese"), but I couldn’t find it, so I used Havarti.

(She says you can find Butterkäse at Aldi.)

Anyway, all you need to do is bake a large sweet potato in the oven at 350 degrees for about 90 minutes (or until nice and soft).
Â
Make sure to poke lots of holes in it first so the yumminess leaks out.
Â
When it’s finished, turn off the oven and Iet the potato rest inside for an additional 30 to 60 minutes. (I don’t know why, just do it.)

Then take out the potato, cut off the top and insert long slices of cheese into the center.
Â
Let it get all melty and top with sea salt and pepper.

Oh my gosh! It’s so good!
