You need this healthy (and delicious) Mediterranean beef ‘rice’ bowl in your life.

This tasty recipe is another reminder that healthy eating doesn’t have to be complicated or boring.
It makes a perfect weeknight dinner the whole family will love!
WHAT’S IN IT
1 lb. lean ground beef
2 tbsp minced garlic
1 tbsp lemon zest
1 tbsp Mediterranean seasoning
2 tbsp Walden-Farms apple butter
½ cup green onion chopped
Braggs amino acid or low sodium soy sauce
Optional: Top with egg
HOW TO MAKE IT
Brown ground beef with a tsp. of olive oil if needed; add garlic, lemon zest, seasoning, apple butter and soy sauce.
Roast riced cauliflower in oven or sear in a skillet until warm and top with meat mixture.
I like to add an over medium egg on top and serve it with roasted eggplant or air fryer okra.
