If you have any leftover turkey you need to use, you’ll want this recipe for turkey and wild rice soup.
This creamy dish has all the feels you want on a cold day.

HERE’S WHAT YOU NEED
3 tbsp butter
1 medium onion
2 medium carrots
2 stalks celery
3 cloves garlic
1 cup wild rice
6 cups chicken broth
2 cups cooked turkey
1 tsp dried thyme (2 tsp fresh)
1 tsp rosemary (2 tsp fresh)
2 bay leaves
1 tsp salt
½ tsp black pepper
¼ cup flour
2 cups whole milk or half and half
½ heavy cream
2 tbsp parsley
turkey and wild rice soup
Optional add-ins
½ cup corn
½ peas
1 cup mushrooms
1 cup spinach or kale
HOW TO MAKE IT
Saute onion, garlic, carrots and celery in butter; add seasonings and flour and combine.
Stir in broth, cooked rice, turkey and milk and simmer for 10 minutes before serving.
