This cheesy Italian chicken spaghetti squash casserole and cheeseburger pie are simple and tasty.

If you don’t like to spend much time in the kitchen, these recipes for cheesy Italian chicken spaghetti squash casserole and cheeseburger pie are for you.
And the best part? They are both healthy and delicious.

ITALIAN CHICKEN CASSEROLE - WHAT’S IN IT
1 cup prepared spaghetti squash
1/2 cup diced Italian tomatoes
2 wedges light Laughing Cow garlic and herb cheese
1/4 cup 2% reduced fat Mozzarella cheese, shredded
7 oz. raw chicken breasts, cubed
1 tbsp. Wishbone light Italian dressing
2 tsp. parmesan cheese
HOW TO MAKE IT
Preheat oven to 350 degrees. Prepare spaghetti squash by oven or microwave.
Marinate chicken in Italian dressing. Spray a nonstick skillet with cooking spray; add chicken and cook thoroughly. Set aside.
Saute spaghetti squash, Italian diced tomatoes and cheese wedges until cheese is melted.
Pour squash mixture in small casserole dish. Spread chicken on top. Sprinkle shredded cheese then Parmesan cheese over chicken.
Bake 7-10 minutes or until cheese has melted.
CHEESEBURGER PIE – WHAT’S IN IT
1 medium spaghetti squash
1 lb. lean ground beef
¼ cup diced onion
2 eggs
⅓ cup lowfat, plain Greek yogurt
2 tbsp. tomato paste
½ tsp. Worcestershire sauce
⅔ cup reduced fat shredded cheddar
2 oz. dill pickle slices
Cooking spray
HOW TO MAKE IT
Preheat oven to 400 degrees.
Prepare spaghetti squash in an oven or microwave.
When cooked, remove shreds of squash with fork; press squash into greased baking dish evenly and up the sides.
In a lightly oiled skillet cook ground beef and onion until it is cooked thoroughly, about eight minutes. Drain if needed and remove from heat.
In medium bowl, whisk eggs, yogurt, tomato paste and Worcestershire; stir into beef mixture.
Pour filling into prepared squash in a baking dish. Sprinkle the meat with cheddar cheese and top with dill pickle slices.
Bake for 40 minutes.
