These ricotta and bacon stuffed mini peppers are a healthy addition to your Super Bowl spread.

Your Super Bowl party snacks don’t have to be full of fat and calories.


You will love this healthy and delicious recipe for ricotta and bacon stuffed mini peppers.


WHAT’S IN IT


1 lb. assorted mini peppers, about 18


2/3 cup part skim ricotta cheese


1 egg, beaten


1/2 cup reduced fat mozzarella cheese, shredded


1/4 cup freshly grated parmesan cheese


4 slices turkey bacon


2 tbsp fresh basil chopped


2 tbsp fresh parsley, chopped


1/4 tsp salt ~optional


1/8 tsp black pepper

HOW TO MAKE IT


Preheat the oven to 350 degrees.


Cook turkey bacon and chop into very small pieces. Set aside.


Cut peppers in half lengthwise, removing seeds and ribs. Place on a baking sheet and set aside.

In medium bowl, combine ricotta, egg, mozzarella cheese, parmesan cheese, turkey bacon, basil, parsley, salt and pepper.


Fill peppers with the cheese mixture.


Bake for 18 to 20 minutes or until ricotta is set and cheese is melted.
