Foodies, rejoice.
Stephenville’s newest fine dining establishment – The Seeker – has released a look at its first menu, and if you like good food, you are going to LOVE what you see.
Led by the legendary James Beard award-winning chef Stephan Pyles, The Seeker will include his signature brand of modern Texas cuisine with main dishes like wagyu beef brisket tacos, fried oyster tacos, pork belly empanadas, honey-fried chicken, seared wild halibut, boneless short ribs, wood-fired beef tenderloin and coriander-cured Texas axis venison.
And that’s not all.
A lengthy list of shareables include queso fundido, hell’s eggs (candied bacon and chile pop rocks), Cajun-style skull island tiger prawns and fig-mascarpone flatbread and ceviche.
Of course, no dinner is complete without dessert. Think heaven and hell cake (peanut butter powder and raspberry sorbet), “coffee and doughnuts” (freshly fried beignets and espresso crème brulée) and Mexican chocolate fondant.
The Seeker is located next to the fully-reimagined Interstate Inn, a luxury boutique 33-room motel set to open this fall.

The restaurant will be open from 5-10 p.m. seven days a week.
