This recipe for Thai chicken lettuce cups is full of flavor and made in the crockpot so it’s a cinch.


And with only 93 calories and one gram of fat per lettuce cup, your waistline can afford to enjoy a few.

WHAT’S IN IT


1 lb. boneless chicken breasts


1/2 cup reduced sodium chicken broth


4 cloves minced garlic


1 tbsp. sugar


1 tbsp. reduced sodium soy sauce


2 tsp. oyster sauce


1/2 tsp. crushed red pepper flakes


1 cup torn basil leaves, divided


12 Boston lettuce leaves


4 green onions, chopped


Shredded carrots and thinly sliced radishes

HOW TO MAKE IT


Combine the first seven ingredients in a crockpot and cook on low for 2 ½ hours.


Remove chicken and shred with forks. Return to slow cooker and stir in 1/2 cup of basil and heat through.


Serve in lettuce leaves with rice, green onions, carrots and radishes and top with remaining basil.
