Quick and easy lazy lasagna; this recipe is full of taste, but not the fat.

If the holidays have you all tuckered out and you’re ready to get back to the basics, this recipe for lazy lasagna is quick and easy to make – and something your entire family will love.

WHAT YOU NEED


25 ounces lean ground beef


4 cups marinara sauce


2 tsp oregano


3 tsp garlic powder


2 tsp onion powder


4 tbsp reduced fat parmesan cheese

1/2 tsp salt


3 tsp Italian seasoning


1 cup spinach


3 cups 1% cottage cheese


2 eggs, beaten


1 1/3 cup reduced fat mozzarella

HOW TO MAKE IT


Brown ground beef with the following seasonings: 1 tsp oregano, 1 1/2 tsp garlic powder, 1 tsp onion powder and 1/2 tsp salt.


Set cooked meat aside in a bowl and cook spinach in pan drippings until tender; set aside.


Add meat back to pan and add marinara, 1 tsp oregano, 1 1/2 tsp garlic powder and 1 tsp onion powder.

In a separate bowl, mix eggs, cottage cheese and parmesan cheese with 3 tsp Italian seasoning.


Layer in a baking dish: Meat sauce, cottage cheese mixture and mozzarella.


Top with the cooked spinach and the remaining 1/3 cup mozzarella cheese.


Bake at 375 degrees for 20 minutes or until cheese is melted.


Makes nine servings.
