One skillet dish: This creamy spinach and chicken meal is keto friendly and super delicious!

WHAT YOU NEED

 

1 ½ lb. chicken thighs

 

Sea salt/black pepper

 

½ tsp garlic powder 

 

½ tsp onion powder

 

½ tsp smoked paprika

 

½ tsp dried thyme

 

3 tbsp Ghee or olive oil

 

½ medium onion diced

 


4 cloves garlic

 

8 oz almond milk or lowfat cream cheese if not eliminating dairy

 

¾ cup chicken broth

 

1 tbsp lemon juice

 

1 tsp Dijon mustard

 

2 tbsp nutritional yeast (optional)

 

8 oz baby spinach

 


HOW TO MAKE IT

 

Season chicken thighs on both sides with salt, pepper and other spices.

 

Heat large skillet over medium/heat. Add 1 1/2 tbsp oil or ghee to skillet and chicken.

 

Brown 6 to 7 minutes per side; remove from skillet.

 

Lower heat and add remaining oil, onions and garlic and cook until tender.

 

Add cream cheese, broth, lemon juice mustard and stir in nutritional yeast and spinach.

 

Season with salt and pepper; return chicken to skillet and serve immediately.
