Let’s make a spring roll cucumber salad (with a side of Chick-fil-A.)

It’s a busy night, so I'm making this easy and delicious meal at home that will include a side of Chick-fil-A.

 

If you enjoy a good spring roll, you’ll love this salad.

WHAT YOU NEED


1 cup shredded red cabbage


1 red bell pepper, thinly sliced


1 tablespoon sesame seeds (optional)


1/4 cup chopped fresh cilantro



2 large cucumbers, spiraled or thinly sliced


1 cup shredded carrots


1/4 cup chopped roasted peanuts


1/4 cup chopped fresh mint



PEANUT SAUCE


1 tablespoon soy sauce


1 teaspoon toasted sesame oil


1/4 cup creamy peanut butter


1 tablespoon rice vinegar


1 small garlic clove, minced


2–3 tablespoons warm water (to thin)


1 teaspoon grated fresh ginger


1 tablespoon honey or maple syrup



HOW TO MAKE IT


Mix all dressing ingredients in a bowl; gradually add warm gradually until smooth.


In large bowl, toss cucumbers, carrots, cabbage, bell pepper, mint and cilantro.

Pour dressing over the salad and mix well to coat.


Sprinkle with chopped peanuts and sesame seeds before serving.
