Let's bake: A cloudy day calls for these peanut butter bars.

Nothing soothes an unexpected cold snap like a tasty dessert and this recipe for peanut bars will lift your soggy spirits in no time.


The good news is that these taste great on a sunny day as well!

WHAT’S IN IT


1 stick butter, softened


1/2 cup granulated sugar


1/2 cup light brown sugar


1 egg

1/3 cup creamy peanut butter


1/2 tsp baking soda


1/4 tsp salt


1 cup quick cooking oatmeal


1 cup all-purpose flour


1/2 tsp vanilla

Icing


1 16-oz. container of chocolate icing


2 tbsp. creamy peanut butter

HOW TO MAKE IT


Pre-heat oven to 350 degrees and spray a jelly roll pan with cooking spray with flour.


Beat butter and sugars until creamy, then add egg and beat well.


Add peanut butter and beat until incorporated. Sift flour, baking soda and salt.


Stir into creamed mixture; add vanilla and stir in oats.


Pour into prepared pan and bake 10-15 minutes.


Cool briefly, then cover with chocolate icing mixed with peanut butter. Cut into bars.
