Holiday baking: Have fun and get creative with Christmas smash cookies!

Christmas smash cookies are an excellent cookie to throw in your holiday rotation!
Â
With lots of room to play around, and easy to make, these cookies can be as crazy and festive or as simple and elegant as you want.
Â
Bring your butter and eggs to room temp by laying on the counter an hour before you are ready to bake.Â

HERE’S WHAT YOU’LL NEED
Â
1 1/2 sticks (3/4 cup) softened butterÂ
Â
1 cup white sugar
Â
2 eggs
Â
2 tsp. vanilla
Â
2 ½ c flour
Â
¼ tsp baking powder
Â
¼ tsp salt
Â
sprinkles of choice

Â
HOW TO MAKE THEM
Â
In mixer, add softened butter and sugar; blend until light and fluffy.
Â
While that is mixing, crack the eggs in a separate bowl and gently whisk.
Â
In another bowl, combine flour, baking powder and salt.Â
Â
Once butter and sugar are well combined, add vanilla and eggs; slowly add flour mixture.Â
Â
Â
Remove from mixer and roll dough into small balls. (I prefer mine to be 2-3 inches thick)
Â
Roll the dough balls in sprinkles and place on cookie sheet or plate.
Â
Refrigerate for about an hour.Â
Â
Meanwhile, preheat oven to 350 degrees.
Â
Remove dough from refrigerator and place on a parchment paper-lined cookie sheet.
Â
Take the end of a measuring up and smash the cookie.
Â
Bake for 11-14 min until golden on the edges.Â
Â
Let cool a bit and move to a wire rack.Â
Â
You can stop here or take it a step further.Â
Â
You can make a quick glaze for these cookies by combining powdered sugar and heavy cream, whisk.
Â
Â
Drizzle over cookies or dip cookies in glaze. You can add more sprinkles or add food coloring.
Â
This recipe is fun for all ages and leaves tons of room for creativity.
Â
Other options: Leave sprinkles out completely, add lemon or orange to the glaze for a light citrus cookie or dip cookies in melted chocolate.
