High protein no bake cheesecake for those with a little sweet tooth.

By Sarah McNeal-Weaver
Admit it.
You care enough about your health and weight to make sure to get your daily protein intake.
But sometimes… that sweet tooth sneaks up on us.
This recipe for a high protein, no bake (yay!) cheesecake takes care of both.
HERE’S WHAT YOU NEED FOR THE CRUST
1 1/2 cups crushed graham crackers. (About 11-12 full size sheets)
3 tbs granulated sugar
7 tbs butter
In a food processor blend crackers and pour into bowl.
Melt butter; add sugar and butter, mix.
Press firmly into an 8x8 baking dish lined with parchment paper.
FILLING
2 cups Greek yogurt
1 packet cheesecake pudding mix
1/2 carton cool whip
In large bowl, mix Greek yogurt and dry pudding packet; fold in cool whip.
Pour into crust; cover and refrigerated for two hours.
Top with fruit, caramel, chocolate chips or eat plain.

The Greek yogurt base is a smart way to boost protein without baking, but I wonder how much the pudding mix and Cool Whip dilute that benefit. Since instant pudding relies on modified starches and the whipped topping adds sugar and stabilizers, the final protein per slice may be lower than expected. Have you tried using a higher ratio of Greek yogurt or a lighter whipped cream to keep the texture while improving the macros?
