Get ready for Valentine’s Day with these delicious red velvet whoopie pies.

This recipe for delicious red velvet whoopie pies is the perfect way to show your love this Valentine’s Day.


I hope you enjoy them as much as I do.

WHAT’S IN IT


1 stick of butter, softened


1/4 cup vegetable oil


1 cup sugar


1/2 cup light brown sugar, packed


2 eggs


1-oz red food coloring


2/3 cup buttermilk


3 cups of all-purpose flour

1/4 cup of cocoa


1 tsp. salt


1 tsp baking soda


1 tsp white vinegar


1 tsp vanilla extract

CREAM CHEESE ICING


8-oz cream cheese, softened


4-oz butter, softened


1 lb. powdered sugar


1 1/2 tsp. vanilla

HOW TO MAKE IT


Preheat oven to 350 degrees and line two baking sheets with parchment paper.


Cream butter, oil and both sugars until light and fluffy. Add eggs one at a time, blending well after each addition.


Add food coloring and buttermilk and mix until incorporated.


In a separate bowl, whisk flour, cocoa, salt and baking soda. Slowly add the flour mixture and mix until just combined.


Add vinegar and mix, then vanilla and mix.


Scoop out the batter and place on prepared baking sheets.


Bake about 8 minutes, until cookies are set.

CREAM CHEESE FILLING


Beat cream cheese and butter until light and fluffy. Gradually add powdered sugar, mixing well to combine. Stir in vanilla until incorporated.


HOW TO MAKE THE WHOOPIE PIES


Spread about 2 tablespoons of filling on one cookie and place another one on top.


Press lightly together and repeat with remaining cookies.
