Summer is upon us, which means it’s time for lighter fare.
Â
This recipe for teriyaki chicken tacos is on repeat at our house and I bet you will love it too!

FOR THE SAUCE
Â
¼ cup plain Greek yogurt
Â
2 tbsp mayo
Â
2 tbsp rice vinegar
Â
1 tbsp sweet chili sauce
Â
1 tsp toasted sesame oil
Â
¼ tsp salt
Â
1 cup cilantro
Â
½ tsp sesame seeds
Â
OTHER ITEMS
Â
1 large English cucumber
Â
2 tbsp ghee or oil
Â
1 pound chicken thighs
Â
3 tbsp of low sodium soy sauce
Â
1 tsp ginger
Â
2-3 cloves of garlic
Â
2 tbsp sweet chili sauce
Â
Flour or corn tortillas
Shredded cabbage
Â
Avocado
Â
Crushes peanuts
Â
HOW TO MAKE IT
Â
Mix all ingredients for sauce in small bowl. Â
Â
Coat chicken thighs with soy, sweet chili, garlic and ginger, add to a warm skillet with ghee and brown on both sides and cover until cooked through. Â
Â

Build tacos by first adding a layer of sauce, sliced cucumber, cabbage, chicken, peanuts and top with a little additional cilantro.Â
