For a fresh, summery take on tacos, try these made with chicken and teriyaki.

Summer is upon us, which means it’s time for lighter fare.
This recipe for teriyaki chicken tacos is on repeat at our house and I bet you will love it too!

FOR THE SAUCE
¼ cup plain Greek yogurt
2 tbsp mayo
2 tbsp rice vinegar
1 tbsp sweet chili sauce
1 tsp toasted sesame oil
¼ tsp salt
1 cup cilantro
½ tsp sesame seeds
OTHER ITEMS
1 large English cucumber
2 tbsp ghee or oil
1 pound chicken thighs
3 tbsp of low sodium soy sauce
1 tsp ginger
2-3 cloves of garlic
2 tbsp sweet chili sauce
Flour or corn tortillas
Shredded cabbage
Avocado
Crushes peanuts
HOW TO MAKE IT
Mix all ingredients for sauce in small bowl.
Coat chicken thighs with soy, sweet chili, garlic and ginger, add to a warm skillet with ghee and brown on both sides and cover until cooked through.

Build tacos by first adding a layer of sauce, sliced cucumber, cabbage, chicken, peanuts and top with a little additional cilantro.
