Ingredients for tzatziki
1 cup plain Greek yogurt
Juice from 1 lemon
1 tablespoon olive oil
2 teaspoon dried dill
2 cloves garlic, minced
½ cup shredded cucumber
Ingredients for tomato salad
10 ounces grape tomatoes quartered
¼ cup red onion
¼ cup parsley
1 tbsp olive oil
1 tbsp red wine vinegar
2 cloves garlic
Ingredients for lemon parsley rice
1 ½ cup white or jasmine rice
3 cups chicken broth
1 tbsp butter
Juice one lemon
Zest one lemon
⅓ fresh parsle
Ingredients for Greek turkey
2 tbsp olive oil
1 lb. ground turkey leanest
½ of a white onion
2 tsp garlic
2 tsp dried oregano
1 tsp basil
⅓ cup chopped sun dried tomatoes
HOW TO MAKE IT
Combine tomatoes, onion, parsley, olive oil, red wine vinegar and garlic in bowl; season with salt and pepper and refrigerate until ready to use.
While the rice is cooking, cook the turkey.
Add olive oil to a large skillet; add turkey and onion and cook until the ground turkey is browned and onions are soft.
Add seasoning and chopped sundried tomatoes.
Top with cucumber, kalamata olives and tzatziki.
