Did someone say brunch? This recipe for mini vegetable quiche is easy and oh, so good!
Make it for a group of your BFFs or a single serving for just yourself
WHAT’S IN IT
1 cup egg beaters
1/2 cup low moisture part skim 2 % mozzarella cheese
1/2 cup tomato, chopped
1/2 cup broccoli, chopped
1/2 cup zucchini, chopped
1 original laughing cow cheese wedge
1 laughing cow cheese wedge (any flavor except original)
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
HOW TO MAKE IT
Preheat oven to 375 degrees; spray baking dish with cooking spray.
Mix all ingredients together in a bow, pour into prepared pan and bake 35 minutes.
Makes 1 serving.
