Turn dinnertime into a celebration with this delicious air fried coconut shrimp.

Boring? Don’t even think about it.


This healthy and delicious recipe for air fried coconut shrimp will liven up your family’s dinner and turn it into a celebration.


WHAT’S IN IT


9 ounces raw shrimp, shell and tails removed


1 1/2 tbsp almond flour


1 1/2 tbsp unsweetened shredded coconut


1 tsp McCormick Perfect Pinch Fiesta Citrus salt free seasoning


1 egg white

WHAT’S IN IT


Combine almond flour, unsweetened coconut and seasonings in a medium sized bowl.

Dip raw shrimp in egg white and add to almond flour coconut mixture and toss to coat.


Place shrimp in an air fryer and spray lightly with cooking spray.


Cook at 400 degrees for 4 minutes. Open the basket and flip shrimp to the other side. Spray lightly with cooking spray.


Cook for an additional 4 minutes or until crisp. (Do not over cook shrimp or they will be dry.)


I sprinkled Trader Joe's 21 Seasoning Salute over cooked shrimp to finish it off. Enjoy!


*You could also bake the shrimp at 400 degrees for 15 to 20 min, flipping halfway through.


**Optional dipping sauce Not 5&1 compliant but a healthy version

Sriracha Mayo Dipping Sauce

¼ cup mayo (olive oil less fat variety)

2 tbsp sriracha sauce

1 tsp apple cider vinegar

1 tsp garlic powder

1 tsp raw honey
