There’s nothing more soothing than a hot bowl of soup on a cold day.
This recipe for potato kielbasa soup makes a hearty meal everyone in your family will love!
WHAT YOU NEED
1 T. olive oil
1 lb. kielbasa sausage, sliced
2 garlic cloves
1/2 cup diced yellow onion
1/2 cup diced carrots
2-3 celery stalks, sliced thin
4 cups chicken stock
3 potatoes, peeled and cubed. (I use russet)
2 cups milk
2 cups shredded Colby Jack cheese
1/2 cup fresh Parmesan cheese, shredded
1/2 t salt
1/4 t pepper
1/4 cup chopped parsley
HOW TO MAKE IT
Heat olive oil (medium heat) in a Dutch oven; add sausage and cook for 4 to 5 minutes stirring often.
With a slotted spoon remove sausage and add garlic, onion, carrots and celery. Sauté for 3 minutes.
Add chicken stock and potatoes and bring to a boil. Reduce heat to simmer and cook another 15 minutes until potatoes are tender.
Add cooked sausage, milk, both cheeses, salt, pepper and cook another 10 minutes or until cheese is completely melted.
Top with parsley and enjoy!
