This light and refreshing caprese chicken is a fan favorite and it’s a cinch to make.

This recipe for chicken caprese is a fan favorite because it’s easy to make, healthy and delicious.


The dish pairs well with a Caesar or side salad and makes the perfect light dinner for those watching their waistline.


This recipe makes three servings.

WHAT’S IN IT


2 tsp olive oil


18 ounces raw chicken breast


1/4 tsp salt


1/2 tsp pepper

5 tsp balsamic vinegar


2 cloves garlic


1 pint tomato


2 Tbsp basil


4 ounces part-skim mozzarella

HOW TO MAKE IT


Heat oil in large skillet; season chicken with salt and pepper and cook until golden (about six minutes per side), then transfer to plate.


Add balsamic vinegar and garlic to skillet and stir until fragrant, about one minute.

Add tomatoes and season with salt; simmer until soft, then stir in basil.


Return chicken to skillet and nestle in tomatoes; top with a slice of mozzarella and cover with lid to melt cheese.


Spoon tomatoes over chicken and serve.
