CRANBERRY BACON KALE SALAD
6 cups chopped kale
1 red apple (honeycrisp or gala)
⅔ cup crisp bacon
1 cup almonds, roughly chopped
⅓ cup crumbled feta cheese
⅓ cup dried cranberries
DRESSING
4 tbsp apple cider vinegar
½ cup apple juice
1tbsp Dijon mustard
2 tbsp honey
½ tsp salt
½ cracked black pepper
¼ cup olive oil
