Pardon my crumbs, but these Kodiak Cakes are delicious.


I rarely eat a big breakfast. And by rarely, I mean never.

My morning meal almost always consists of a piece of spicy veggie sausage and two cups of coffee with a splash of vanilla creamer.

If I’m feeling really crazy, I might trade the sausage for a hard-boiled egg.

But on Saturday, The Daughter made brunch and introduced me to something that is apparently popular among millennials: Kodiak Cakes.

She told me I needed a box of this powdery goodness, so I added it to last week’s grocery list. I accidentally picked up a box of the dark chocolate mix, which turned out to be a good thing.

The Daughter and her boyfriend whipped up a batch of these chocolate pancakes drizzled with sugar-free syrup and it was amazing.

The company promotes itself with the slogan: Nourishment for Today’s Frontier.

The protein-packed “power cakes” are made with 100% whole grains and 14g protein per serving. They are only 190 calories and have fewer carbs than your average pancake.

That’s enough to convince me to enjoy this occasional splurge. I’ll be buying more of this mix and trying out a few of the many recipes for Kodiak Cakes you can find on Pinterest.

It beats a hard-boiled egg any day.
