This recipe for spaghetti squash caprese bake is simple to make, healthy, and oh, so tasty!
And it serves four!
HERE’S WHAT YOU NEED
1 medium to large spaghetti squash (4 cups, cooked)
2 cloves garlic
4 Roma tomatoes (1 cup)
1/4 cup fresh basil
1 cup baby spinach
4 tsp olive oil
3/4 cup and 1/4 cup part-skim shredded mozzarella
Salt and pepper
HOW TO MAKE IT
Preheat oven to 375 degrees; bake squash on cookie sheet until tender.
Once the squash is cooked, place noodles in a large bowl and set aside.
Mince garlic, cut tomatoes into bite-size pieces, chop basil and spinach leaves and place all of these ingredients into a large bowl with olive oil and spaghetti squash.
Mix well and season with salt and pepper to taste.
Stir in 3/4 cup of shredded mozzarella; spread mixture into a pie or one-quart baking and sprinkle with remaining 1/4 cup mozzarella.
Bake for 30-40 minutes or until cheese on top is lightly browned.
