There’s no mixing, stirring or whipping required to make these sweet potato pizzas, and they are delish.

WHAT YOU NEED
Sweet potatoes
Barbecue sauce
Chicken, grilled or rotisserie
Fresh mozzarella
Red onion
Jalapenos
HOW TO MAKE IT
On a parchment lined or silicone baking sheet lay half-baked sweet potato skin side down; drizzle with oil and cover with parchment.
Using an iron skillet or heavy pot press down to smash the potato until thin, about ¼-inch thick.
Peel back parchment and drizzle with a little more olive oil and return to a 450 degree oven until the edges are crisp.
Remove from the oven and top with barbecue, shredded chicken, red onion and cheese.
Return to the oven until the cheese is bubbly.
Remove from the sheet pan with a large spatula and dress with ranch dressing, jalapenos and cilantro.
