Mini bell peppers and cream cheese add just the right spice and creamy texture to Cajun chicken.

This recipe for Cajun chicken uses some of my favorite ingredients.
It has a great spice combination and the cream cheese adds just the right creaminess.

CAJUN SEASONING – HERE’S WHAT YOU NEED
1 tsp paprika
¼ tsp cayenne pepper
¼ tsp oregano
¼ tsp thyme
¼ tsp salt
OTHER THINGS…
2 cups mini bell peppers
4 chicken breasts
4 cloves garlic
6 oz. reduced fat cream cheese, cut into 8 slices
½ cup cheddar cheese
Olive oil
HOW TO MAKE IT
Combine dry seasonings in a bowl and sprinkle on top of chicken; drizzle olive oil in the bottom of a baking dish and place sliced mini peppers in dish.
Place chicken breast on top of peppers and top with minced garlic and sliced cream cheese.
Sprinkle grated cheddar on each chicken breast and bake at 375 degrees for 20-30 minutes.
Finish under the broiler for 2 minutes.
Serve with side salad or veggie of choice.
