I’m continuing my series on healthy eating with a final recipe that is perfect for those following a Mediterranean diet.
This recipe for harissa chicken bowls is full of flavor with black lentils and Moroccan spices packing a tasty punch.
WHAT YOU NEED
1 lb. cubed chicken breast (or rotisserie chicken)
¼ cup honey
2 tbsp harissa paste
Juice of ½ lemon
2 cloves garlic
Cayenne pepper to taste
Moroccan seasoning or cumin, black pepper, sea salt
2 cup lentils prepared
Tomato Cucumber salad
Tzatziki
¼ cup feta cheese
½ cup hummus
Red onion (pickled)
HOW TO MAKE IT
Prepare cubed chicken in a skillet with 2 tablespoons of olive oil and sauté in skillet with two cloves garlic, lemon, harissa paste and honey; heat thoroughly adding seasonings.
Prepare lentils according to the package.
Assemble bowls, starting with lentils on the bottom, chicken, tomato salad, feta, tzatziki and a scoop of hummus.
Garnish with mint and a wedge of lemon.
