Made with balsamic vinegar, tomatoes and mozzarella, caprese chicken is a family favorite.

If you love the taste of the Mediterranean, this recipe for caprese chicken will top your family’s list of favorite dishes.

And, of course, it’s healthy and delicious!


2 tsp olive oil

3 (6-oz) chicken breasts

1/4 tsp salt

1/2 tsp pepper

5 tsp balsamic vinegar

2 cloves garlic

1 pint cherry tomatoes

2 Tbsp basil

4 ounces part-skim mozzarella


In large skillet over medium-high heat, heat oil.

Season chicken with salt and pepper and cook until golden, about six minutes per side. Transfer to a plate.

Add balsamic vinegar to skillet to deglaze, then add garlic and stir until fragrant, one minute.

Add tomatoes and season with salt. Let simmer until soft, five to seven minutes, then stir in basil.

Return chicken to skillet and nestle in tomatoes. Top with a slice of mozzarella and cover with lid to melt cheese.

Spoon tomatoes over chicken and serve.
