With the arrival of spring comes the opportunity to cook with fresh fruits and veggies.
And there is no time like the present to turn your attention to clean, healthy eating as a new season springs to life.
This delicious recipe for broccoli, sun dried tomato and chicken Caesar salad is easy, tasty and delicious.
WHAT’S IN IT
1 ¼ cup broccoli florets
¼ cup sun dried tomatoes
6 oz. shredded chicken
2 Tbsp. light Caesar dressing
½ tsp. pepper
1 Tbsp. capers
HOW TO MAKE IT
I personally steam the broccoli florets to be “al dente” versus raw because I prefer that (and the color becomes more vibrant).
If your sun dried tomatoes are in oil; rinse, chop and refrigerate for a bit before adding them to the salad.
