This healthy and delicious recipe is perfect on a hot summer night.
I’ve made this sloppy joe bowl before, but this dish includes a little more protein.

WHAT YOU NEED
1 lb. ground beef
Potatoes
2 tbsp ghee or olive oil
1-2 tbsp minced garlic
¼ cup yellow onion, diced
¼ cup red onion, diced
1 green bell pepper, diced
1 tsp Dijon mustard
1 tsp yellow mustard
3 tbsp paleo or low sugar ketchup
2 tbsp coconut aminos
1 tsp salt
¼ ground pepper
2 tbsp tomato paste
1 tsp chili powder
1 tsp apple cider vinegar
OPTIONAL TOPPINGS
Dijon mustard
Pickles
Pickled red onions
Sliced jalapeno
HOW TO MAKE IT
Pre-heat oven to 415 degrees.
Place sweet potato slices or regular potato on a baking sheet and roast for 10-12 minutes.
Brown lean hamburger in a skillet with ghee; sauté veggies and add spices, paste and vinegar.
Serve with high protein rice, quinoa or roasted cauliflower rice.










This sounds like the kind of dinner I’d make after a long, hot day when I don’t want anything too heavy.
