If you like salmon, you will love this delicious recipe for Salmon Florentine.


It’s simple to make, healthy and oh-so-delicious.

WHAT’S IN IT


½ chopped green or spring onion


1 tsp olive oil


2 garlic cloves


One 12-oz package chopped spinach, thawed and patted dry


1 ½ cups cherry tomatoes


¼ tsp crushed red pepper flakes


¼ salt and pepper


½ cup part skim ricotta cheese


Four 5 ½ oz wild salmon fillets

HOW TO MAKE IT


Preheat oven to 350 degrees.


In medium skillet, cook onions in oil until they begin to soften. Add garlic and cook one more minute.


Add spinach, tomatoes, red pepper flakes and salt and pepper; cook for two additional minutes. Remove from heat and stir in ricotta.


Place a quarter of the spinach mixture on the top of each salmon fillet. Bake for 15 minutes or until salmon is cooked through.
