Elevate family dinner with this cozy homemade chicken pot pie.

School is back, fall is on the way and it’s time to make those cozy dinners.
One of our family’s favorites is this easy homemade chicken pot pie.
WHAT YOU NEED
1/2 cup shortening or butter
1 1/2 cups flour plus, 1/2 cup for surface
1/2 tsp of salt
1/2 cup ice cold water
FILLING
2 cups frozen veggies
2 cups chopped, cooked chicken
1 can cream of chicken soup
HOW TO MAKE IT
Start by adding flour and salt into a mixing bowl, mix together with a fork.
Add in shortening or butter; cut with pastry blender until shortening is about pea-sized in form.
Add water (no ice) about 2 tbsp at a time until dough is soft, not sticky.
Flour your hands; place cold dough onto floured surface and roll into a circular shape about 1/2 inches thick.
Take pie pan to measure width.
Transfer crust into pan and trim, mold, shape as necessary.
In large bowl, combine frozen vegetable medley, cream of chicken soup, two cups chopped chicken and pour into crust.
Layer top crust.
Bake at 350 degrees for about 40 minutes.
