Chickpea Italian chopped salad, salmon bites make perfect dinner for those following a Mediterranean diet.

I’m continuing my series on healthy eating with two more recipes perfect for those following a Mediterranean diet.

 

Beans and legumes are a great source of nutrients and this recipe for chickpea Italian chopped salad is a family favorite.



Pair it with a side of tasty salmon bites and you have a perfectly balanced and delicious dinner!

Chickpea Italian chopped salad

 

1 can garbanzo 

 

1 can white beans 

 

Flat leaf parsley 

 


1 red bell peppers

 

½ red onion

 

Banana peppers

 

Sliced salami

 

1/2 cup of olive oil 

 

1/4 cup red wine vinegar 

 

Juice of one lemon 

 

Salt and pepper to taste

 


Salmon bites

 

½ cup almond flour or meal

 

¼ cup Everything but the Bagel seasoning

 

½ cup mayo

 

Juice of ½ lemon

 

1 tbsp Dijon mustard

 

Coat salmon with mayonnaise, lemon, Dijon and dredge lightly in dry seasonings.

  

Bake in air fryer for 12-15 minutes until cooked through and slightly browned. Serve with spicy mayo.

This recipe looks so good — love how fresh and healthy it feels! The combination of the chickpea Italian chopped salad with those salmon bites sounds perfect for keeping meals both tasty and aligned with a Mediterranean diet.


I’ve been trying to eat better lately and even checked out some Beachbody reviews for workout and nutrition ideas, so seeing meals like this gives me a lot of inspiration for balanced dinners after a good sweat. Definitely saving this one to try!
