If you’re on TikTok, you’ve certainly fallen on the side of Courtney Cook, you know the charming young mother who has gone viral for her interesting recipes.
Courtney makes strange, but delicious-looking concoctions that have made her a TikTok sensation.
She makes these Korean eggs that look so delicious I couldn’t wait to try them.
I mean, what’s not to like about boiled eggs soaked in soy sauce and green onions and topped with kewpie mayo?
I made my first batch last week, and well, they were pretty good. (The Husband did not love it though.)
But if you like eggs as much as I do, these are worth a try.
(I also made Courtney’s viral cheese-stuffed sweet potatoes and they were a BIG hit at our house. I’ll tell you about it soon.)
Meanwhile, here’s what you need for the Korean eggs (these measurements are approximate depending on how many you make).
6 eggs, boiled and peeled
½ cup soy sauce (I use low sodium)
½ cup water
1 tbsp minced garlic
1 tbsp crunchy chili oil
Sesame seeds
Green onion
Kewpie mayo
Optional: red pepper flakes, jalapenos, honey, red onion.
This recipe is fun to make because it’s so adaptable.
Like more spice? Add red pepper flakes, jalapeno or more chili oil.
Like it sweet? Add a little honey.
I love green onions, so I added several to the mix and let everything marinate in the fridge for about 24 hours.
I liked them best with a dash of kewpie mayo on top (to add creaminess), but it also adds calories so beware of that.
For breakfast, I would pull out a couple of eggs and munch on the green onions.
They also make a great snack.
