On Saturday, July 26, The Seeker in Stephenville invites you to an unforgettable evening of food, wine, and Texas hospitality with its special event: Texas Roots & Refined Sips: A Winemaker’s Dinner featuring acclaimed James Beard Award Winning Chef Stephan Pyles and Texas wine legend Kim McPherson of McPherson Cellars.
This one-night-only experience brings together the bold flavors of summer, the artistry of wine pairing, and the soulful spirit of Texas cuisine in a setting as stylish as it is welcoming.
The evening begins at 7 p.m. and includes a five-course dinner with curated wine pairings, thoughtful storytelling, and the kind of culinary moments that linger.
The menu, crafted by Chef Pyles, is a showcase of creativity rooted in local flavor.
Dishes include vanilla-scented sea scallop with mascarpone-polenta cake and Fredericksburg peaches, and peekytoe crab-celeriac salad paired with ruby red grapefruit - light, elegant, and vibrant with summer ingredients.
For heartier fare, the evening features an espresso braised pork belly over sweet corn humita, and a black pepper–cured smoked duck breast served with sweet potato pancake and summer truffle sauce.
Dessert ends the night on a whimsical note with a frozen macadamia nut bombe, complemented by ginger crème anglaise and pickled blackberries.
Each course is paired with a hand-selected wine from McPherson Cellars, including Albarino, Rosé of Sangiovese, Dolcetto Block Select, and Tre Colore, all chosen to highlight the best of Texas terroir.
Tickets are $175 per person, plus tax and gratuity, and only a few seats remain.
