A grilled cheese waffle made with spaghetti squash? Yes, please.

If you love a rich, gooey grilled cheese sandwich, try this healthy version.
And yes, you can serve it with your favorite tomato soup.
WHAT’S IN IT
1½ cups cooked spaghetti squash
1 egg
3 tbsp grated parmesan cheese
½ cup reduced-fat shredded cheddar cheese
1 pinch salt
HOW TO MAKE IT
Place cooked spaghetti squash (in two batches) into a cheesecloth or clean, thin dishtowel and squeeze out as much liquid as possible.
In medium bowl, combine spaghetti squash, eggs, parmesan and salt; mix until well-combined.
Preheat waffle iron to medium-high heat. Spread mixture in an even layer in greased waffle iron, and cook until golden brown.
Let set about 10 minutes.
Sprinkle cheddar cheese onto half of spaghetti squash waffle and fold over other half on top.
Close waffle iron gently and continue cooking until cheese is melted to your liking.
Serve immediately.
