1 post, 2 great recipes. Air-fried coconut shrimp and bang bang shrimp.



It’s all about shrimp today.


And if you love it as much as we do, you’ll enjoy these healthy and delicious ways to cook it.

AIR-FRIED COCONUT SHRIMP

9 ounces raw shrimp, shell and tails removed


1 1/2 tbsp almond flour


1 1/2 tbsp unsweetened shredded coconut


1 tsp McCormick Perfect Pinch Fiesta Citrus salt free seasoning


1 egg white

HOW TO MAKE IT


Combine almond flour, unsweetened coconut and seasonings in medium-sized bowl.


Dip raw shrimp in egg white and add to almond flour coconut mixture and toss to coat.


Place shrimp in air fryer and spray lightly with cooking spray.


Cook at 400 degrees for four minutes, then open the basket and flip shrimp to the other side.

Spray lightly with cooking spray and cook an additional four minutes or until crisp. (Do not overcook shrimp or they will be dry.)


You can also bake shrimp at 400 degrees for 15 to 20 minutes, flipping halfway through.


I sprinkle Trader Joe's 21 Seasoning Salute over cooked shrimp to finish it off.

Optional: Sriracha Mayo Dipping Sauce


¼ cup mayo (olive oil less fat variety)


2 tbsp sriracha sauce


1 tsp apple cider vinegar


1 tsp garlic powder


1 tsp raw honey

Bang bang shrimp

BANG BANG SHRIMP


7 oz cooked shrimp


1 ½ oz Avocado


3.5 oz shredded cabbage


2 tbsp Lite Wishbone Thousand Island dressing


1 tsp hot sauce


¼ tsp Everything but the Bagel seasoning


Cook shrimp and toss in sauce, then serve on a bed of slaw or in tacos.
