You need this mouth-watering waffled tuna melt in your life.

Everyone loves a good tuna melt, right?


But most of us can do without the extra carbs, which is what makes this recipe for a waffled tuna melt all the more appealing.

WHAT’S IN IT


18-oz. canned tuna, packed in water


3 large eggs


½ cup low-fat cream cheese


2 cups minced celery


8 scallions, minced

½ tsp salt


¼ tsp ground black pepper


½ cup reduced-fat cheddar cheese


Cooking spray


6 cups romaine lettuce, cut into ¼ -inch strips


¼ cup ranch dressing

HOW TO MAKE IT


Drain water from the tuna.


In mixing bowl, combine cream cheese and eggs and mix until thoroughly combined.


Combine the tuna with the egg-cream cheese mixture and stir in celery, scallions, salt, pepper and cheese.

Preheat a waffle iron and spray both sides with cooking spray.


Put an adequate amount of the tuna mix on your waffle iron (the amount may vary depending on the waffle iron's size), and cook until golden brown for about 15 minutes.


Once done remove the tuna waffles from the waffle iron and place on a wire rack; repeat until the mixture is used up.

Combine the lettuce with the ranch dressing and divide evenly onto four plates.


Top each plate with an equal number of tuna waffles.


Per Serving: 380 calories, 44g protein, 13g carbohydrate, 17g fat.
